Organic cocoa nibs and unsweetened organic cocoa powder are the ingredients used in these pancakes to give you your chocolate fix without the unhealthy added ingredients that go with processed chocolate treats.

Cocoa nibs are used to make cocoa powder. They both have heart-healthy antioxidants.

These pancakes have no wheat flour but are made from ground almond meal and coconut flour. These pancakes contain healthy fats and are keto friendly. They are sugar free but sweetened with natural monk fruit sweetener.

Here's the List of ingredients to make 4 pancakes:
- 1 tbsp coconut flour
- 1/2 tsp baking powder
- 1/4 cup almond flour (almond meal)
- 1 tbsp monk fruit sweetener
- 1 tsp cinnamon
- 2 eggs
- 1/4 tsp vanilla
- 1/4 cup organic cocoa nibs
- 1/4 cup unsweetened almond milk
- 1/4 tsp xanthan gum

Place all the ingredients except the cocoa nibs into to blender. Blend them until well mixed.

Transfer the pancake mix into a small bowl and let stand for 5 to 10 minutes.

Stir in the cocoa nibs, reserving a few for garnish.

Prepare a non stick pan with olive oil spray, and turn up to medium/low heat. Divide the cocoa nib pancake mixture into 4 equal parts onto the pan.

Cover the pan with the lid, and let the pancakes cook until they are lightly browned at the edges. Then flip them and cook lightly on the other side.
While the pancakes are cooking, you can prepare the Coconut Oil Cocoa Chocolate Sauce.

Healthy Coconut Oil Cocoa Sauce Ingredients:
( Double the amount for 2 servings)
- 1/2 tbsp coconut oil
- 1 tsp organic cocoa powder
1 tbsp natural monk fruit sweetener

Mix the cocoa sauce ingredients into a small microwaveable bowl, then place in microwave for 15 - 20 seconds, just to melt the coconut oil. Don't let it boil or burn.

Pour the warm chocolate sauce over the pancakes, and sprinkle with some reserved cocoa nibs.

The pancakes worked out to around 143 calories each. Two pancakes and the healthy coconut oil cocoa chocolate sauce topping come in at around 353 fat-and-nutrient healthy calories. Filling and delicious!
