
Here is a healthy version of the chocolate cherry blossom chocolate candy we find in little boxes at the candy store. You thought that you would never taste that combination of a big chocolate bud filled with syrupy cherry liquid and a sweet cherry in the middle. Well here is the nutritious version you can enjoy, guilt free!

No preserved maraschino cherries, no artificial red die colouring, no sugar, no corn syrup or high fructose syrup in this recipe. The chocolate coating is made from heart healthy coconut oil and nutritious organic cocoa powder, some organic coconut and organic raw peanuts. Sweetened with organic raw honey. Tart cherry juice is known for its health benefits and is added to a natural organic bing cherry - thickened with gluten-free tapioca flour. Combine these antioxidant foods and you have a wonderful rich dark chocolate treat with a syrupy sweet cherry surprise inside.
The ingredients are in 2 parts. The first part is for the chocolate shell:

Chocolate Shell Coating Ingredients:
- 1/4 cup natural organic smooth peanut butter
- 1/2 cup organic virgin coconut oil
- 1 tbsp organic raw honey
- 1/4 cup organic coconut flour
- 4 tbsp organic cocoa powder
- 1/4 cup organic unsweetened shredded coconut
- 1/4 cup raw chopped peanuts
- 1 tsp organic vanilla
- pinch of pink Himalayan sea salt
Begin by combining the coconut oil, peanut butter and honey in a heat-proof bowl.

After you stir together the first 3 ingredients, add the 1/4 cup organic coconut flour and stir again.

Heat the chocolate mixture in the microwave for 20 seconds on high.

Stir the chocolate mixture and then add the rest of the ingredients:

After adding the cocoa powder, shredded coconut, chopped peanuts, vanilla and sea salt, stir well. The mixture is ready to divide into 12 parts.

Place about 1 tbsp of chocolate mixture into 12 egg cups. Reserve the left over chocolate mixture for later. Place the egg carton in the fridge to cool. Check on it every few minutes as it hardens, pushing the chocolate up the sides of the egg cups to create a chocolate well.
As the chocolate hardens in the fridge, begin to make the cherry filling.

The Ingredients for the Cherry filling:
- 2 tbsp organic raw honey
- 1/4 cup organic tart cherry juice
- 12 organic bing cherries
- 1 tsp tapioca floout
Cut the cherries open to remove the pit. Make one side of the cut cherry bigger, to be used in the chocolate blossom.
Mix together the tart cherry juice, the honey and tapioca flour.

Then microwave the cherry juice mixture on high heat for only 10 seconds at a time. Stir then microwave again only 10 seconds, to make sure it doesn't over heat and overflow the container. The mixture is ready when it thickens.

Take the hardened chocolate shells out of the fridge and fill each one with a half cherry and the thickened cherry juice mixture.

Put the egg cups with cherry juice mixture back in the fridge to cool.
Once it has cooled then take the egg carton back out and place the left over chocolate mixture over top like a lid over the cherry juice mixture.

Put this back into the fridge until cooled and hardened. When it has cooled, then the chocolate blossoms are ready to pop out of the egg carton and serve.


Serve it with other healthy chocolate treats as a dessert platter.
