Summer tomatoes, still warm off the vine are the best tasting fruit around. And so packed with nutrition your body will become super healthy over night after a bowl of this salad! Spiced up with garden herbs adds to the flavours, aroma and essence.

Why are fresh, vine-ripened tomatoes so good for you? A search on Google reveals tomatoes have lycopene, a strong antioxidant that helps prevent cancer; caratenoids to help your body stay healthy; they fight inflammation; Vitamin A, good for eye health; potassium helps prevent cardiovascular disease; other vitamins like C and E and is said to help lower bad cholesterol. All from the common tomato, so easy to grow in the garden. If you don't have a garden, get some at a farmers market to ensure they are fresh and organic. Stir in some flavourful herbs and it's an easy-as-tomato-pie recipe for a summer salad!

Simple wholesome ingredients are easily stirred together to make this summer salad.

Ingredients List:
- 2 or 3 large garden (or organic farmers market) ripe tomatoes
- about 1 cup of fresh basil leaves
- 2 or 3 fresh organic sprigs of rosemary
- 3 or 4 stalks of garlic chives or regular organic chives
- 1 tbsp of raw organic honey
- 1 tbsp of pure virgin olive oil
- 1 tbsp organic apple cider vinegar

The first step is to chop the tomatoes into bite sized pieces and place into a bowl.

Take the fresh basil and chop it into bite-sized pieces and then place them over the tomatoes in the bowl.

Then finely chop the garlic chives ( or regualar chives) and place them in the bowl.

Take the sprigs of rosemary, and trim the fine leaves off the stems. Discard the stems and then chop the leaves into fine pieces.

Place the chopped rosemary into the tomato bowl.
Set aside the tomato bowl and begin to prepare the honey, oil and vinegar dressing.

In a small cup, combine the 1 tbsp of organic raw honey, the 1 tbsp of virgin olive oil and the 1 tsp of organic apple cider vinegar. Stir the ingredients until well mixed. Then pour the dressing over the tomatoes and herbs in the bowl

Once all the tomatoes and herbs are well coated with the slad dressing, the fresh garden tomato and basil salad is ready to enjoy! And don't throw out any juicy liquid left at the bottom of the bowl. It is full of nutrients. I like to tip my bowl and sip the last of the dressing and tomato juices left at the end!
