The light colour and creaminess comes not from dairy milk or cream, but from the blended tofu to add the protein element to this nutritious vegan Fall soup (vegan, if you use vegetable broth).
What makes this Cream of Pumpkin soup so easy to make is that I used canned pure pumpkin puree, instead of the time consuming task of chopping, de-seeding and baking a real pumpkin.
List of Ingredients for Easy Healthy Cream of Pumpkin Soup:
2 tbsp olive oil
2 cups chopped leeks
2 tsp garlic
8 cups broth (vegetable or chicken)
2 cups pure pumpkin puree
1 cup tofu chopped
2 tsp fresh ginger grated
dash of pink Himalayan sea salt
sprinkle of pumpkin pie spice
Begin by chopping mostly the white parts of the leeks until you get 2 cups.
Ad the 2 tbsp of olive oil to a pan and turn the heat to medium low. Add the 2 cups of chopped leeks.
Add the 2 tsp of chopped garlic to the cooking leeks, and continue cooking and stirring until they are softened and lightly browned.
In a large pot, set to medium low heat, add the 8 cups of chicken or vegetable broth.
In the simmering pot of broth add the cooked leeks and garlic, 2 cups pumpkin puree, 1 cup chopped tofu, and 20 g a grated fresh ginger.
Stir all the ingredients until well mixed, then let the pot of soup simmer for about 30 minutes, until it becomes thickened.
When the broth has cooked, remove from heat and using an immersable blender, stir it around until the soup becomes light and creamy. (If you don't have an immersable blender, you can put the soup in batches into a standing blender, but do it carefully, as the hot soup steam can pop off the blender lid).
Once the soup is creamy, take a taste test and add some Pink Himalayan sea salt to taste.
The soup is ready to serve.
A one cup serving is only 63 calories. I had a generous double helping of 2 cups at 127 calories and sprinkled some pumpkin pie spice for a ginger/spice aromatic soup!
