Easy Healthy Ezekiel Bread - organic, gluten-free, dairy free, no sugar, made in the bread machine

Ezekiel bread with a lovely dense texture, from healthy sprouted grains and legumes, with no processed wheat flour, is easily made with a bread machine.


The name Ezekiel bread is derived from the Bible verse: Ezekiel 4:9 "Take wheat and barley, beans and lentils, millet and spelt; put them in a storage jar and use them to make bread for yourself." The wheat of ancient-of-days was unprocessed and not modified and probably not as hard to digest.


These days it is healthier and beneficial for weight loss to try to be wheat free or at least go for organic and sprouted wheat and grains. I have produced a gluten free version of Ezekiel bread by using buckwheat, which is not wheat at all, but the ground fruit seeds from a flowering plant related to sorrel, knotweed and rhubarb.



Combined with organic seeds and grains, kidney beans and lentils, the Ezekiel Bread produced was a dense, richly textured and plant protein rich bread.

Here is the list of organic gluten-free ingredients for my Ezekiel Bread that I mostly found in the health food section of the bulk food store:

- 1 cup organic millet flour

- 1 cup organic oat flour

- 1 cup organic sprouted buckwheat flour

- 2 tbsp xanathan gum (or chia seeds)

- 1/4 cup lentils

- 1/4 cup red kidney beans

- 1 tbsp organic raw unpasteurized honey

- 2 tbsp extra virgin olive oil

- 1 1/2 cups warm water

- 1/3 cup amaranth seeds

- 1/4 cup sesame seeds


First step is to put the liquid ingredients into the bread machine: the 1/4 cup lentils, the 1/4 cup red kidney beans, the 1 tbsp organic raw unpasteurized honey, 1 tbsp extra virgin olive oil, 1 cup warm water (reserve 1 tbsp olive oil and 1/2 cup warm water for later).


On top of the liquids, place these dry ingredients: 1 cup organic millet flour, 1 cup organic oat flour, 1 cup organic sprouted buckwheat flour, 2 tbsp xanathan gum (or chia seeds), 1/3 cup amaranth seeds.



Dig a dry well into the top of the flour mixture, and add the 1 tbsp of bread machine yeast.

close the lid and set it to the whole wheat setting.


While the bread is kneading, open the lid and add the 1/2 cup of warm water and other 1 tbsp of olive oil. Use a rubber spatula to push the dough together and scrape the sides. Then close the lid until you hear the half way beeper to add any additional ingredients.



When the timer goes off for any additional ingredients ( like you could add raisins or nuts) I added the 1/4 cup sesame seeds, Then close the lid until it is done.



When the timer goes off, carefully lift the hot bread pan out, and slide the bread out onto a wire rack to cool a few minutes before slicing.


It held together nicely to thinly slice 32 slices at around 85 calories each.

The secret to not gaining is not over eating, so it will be hard to stop at one slice! But it is a healthy choice.
