Healthy Apple Chia Oat Crumble - no sugar, no corn starch

Fall harvest time is here and fresh organic apples are in the marketplace.

Homey comfort food like apple crumble linger in our memories, also with the memories of so much sugar sweetness.



So, let's modify the recipe a bit and use a touch of natural stevia to eliminate sugar from our diet. Lets also cut out corn starch and replace it with healthy chia seeds.


Chia seeds are loaded with antioxidants and the carbs are mostly fibre. The chia seeds also offer protein, iron and calcium. They can replace any starchy thickeners in recipes because they have the ability to expand when they get wet and create a pudding-like consistency. You still get a bit of a grainy crunch from the tiny seeds, but I dont mind a bit of texture in the healthy fruit fibre mix.


Lets gather all the ingredients needed for this healthy version of apple crumble:



Healthy Apple Chia Oat Crumble - Apple Filling Ingredients:


- 5 organic apples (around 750 grams)

- 3 tsp organic chia seeds

- 2/3 cup unsweetened organic apple sauce

- 1/2 cup stevia sweetener

- 1/2 tsp cinnamon

- 1 tsp ground fennel

- 1/2 cup cold filtered water


First, begin by chopping all the apples into medium sized pieces.



Combine the apples, chia seeds, apple sauce, water, stevia, cinnamon and fennel into a large stainless steel pot.



Place the apple mixture over medium heat for 2 to 5 minutes until the apples soften and it gets thicker.



Pour the cooked apple mixture into an oiled square cake pan. Set it aside as we prepare the oat crumble topping.



Gather the Ingredients for the oat crumble topping:


- 1 cup organic rolled oats

- 1 tbsp raw organic almond butter

- 1 tsp cinnamon

- 1 tbsp stevia sweetener

- 1/4 cup cold water




Place the rolled oats, almond butter, cinnamon, stevia and cold water in a medium bowl. Stir the oats mixture in the medium bowl until well combined.


Evenly spread the oats mixture over top of the apple mixture in the pan. Preheat the oven to 350 F.



Once the oats are spread over the apples and the oven is warmed up, place the pan of Apple Crumble into the oven for about 35 to 45 minutes, or until it starts to bubble and the apples are all soft and cooked.


Cool the Apple Crumble on a wire rack until ready to serve. We end up with a lovely crumble that I may be bold enough to say is even better than mom made!




A 1/4 serving of this recipe is 280 calories. If you can resist it, you could just take a half portion and only take in 140 sweet apple-y calories.




Dress it up with a bit of light cool whip and a sprinkle of cinnamon for another 35 calories on top!
