Medjool dates, coconut oil, unsweetened cocoa, almonds and almond butter. No cane sugar or dairy or bad-for-you fats or artificial ingredients are included. Although you can over-indulge a bit with these since it is hard to resist, they are nutritious and not harmful to your health! (Just don't eat too much! Or be ready to work it off.)
All natural ingredients that your body will use.
Ingredients:
- 1 cup fresh and pitted Medjool dates. (if they are hard or dry, then they should be soaked in water for 1/2 an hour)
- 2 tbsp melted coconut oil
- 1/2 cup organic almond butter
- 1 tsp pure vanilla extract
- 1/4 cup unsweetened organic cocoa powder
- 1/4 cup ground almond meal
- raw organic almonds chopped
First, prepare your pan - I used a loaf pan - by lining it with parchment paper. You will need to trim the parchment paper and cut fold lines into to it to help it fit the pan.
Once your pan is ready, set it aside.
In your food processor, begin placing all the ingredients, starting with the medjool dates.
On top of the dates put the melted coconut oil, organic almond butter, organic cocoa powder, ground almond meal and 1 tsp organic vanilla extract.
Put the lid on the food processor and begin pulsing the mixture until it gets creamy.
Take a test taste and if you would like a touch more sweetness, add a couple of squirts of liquid stevia and then pulse the mixture again. When it is well mixed, then it is time to transfer it into the prepared loaf pan.
Scoop the fudge out of the food processor container and transfer it into the prepared loaf pan. Press it down to fill out the pan and make it firm.
Once the fudge is pressed down and filled out the bottom of the loaf pan, set the fudge pan aside for a few minutes as you chop the raw almonds. Then sprinkle them on top of the fudge.
Once you sprinkle on your chopped almonds, press them into the top of the fudge a bit so they stay put later, when you cut it.
Wrap the loaf pan in plastic wrap or a plastic bag, and store it in the fridge for several hours or overnight to get solid.
Use the parchment paper to help lift the fudge out of the pan. Now you can cut it into bars or bite-sized squares.
One bite sized piece is estimated to be around 70 calories. But with no artificial ingredients or empty calories, your body will use all that good fibre and nutrition to its benefit!
