It's still summer out and we crave icy creamy summer desserts.
My favourite ice cream treat doesn't come out of a box any more. I always like to buy extra bananas and let them ripen for the freezer, to whip up a frozen soft serve treat. This raspberry version is fresh and fruity - perfect for a muggy summer day!

. If you are on the healthy eating quest, you are likely avoiding sugar, fructose/glucose additives, dairy products and unhealthy oils. How about enjoying a real banana that has vitamin B6 B12, magnesium and potassium, fibre some protein and natural sweetness. Raspberries contain antioxidants like vitamin C and have anti-inflammatory properties. Almond butter provides magnesium and potassium to boost your heart health. Natural sweetness form raw honey also provides antioxidants and has antibacterial properties. Spin all these around in a food processor for healthy benefits to your body but also gives you a guilt-free ice creamy treat! Optional topping of a almond milk chocolate sauce will send you over the top in nutrition and yummy taste!
Those are the simple organic and healthy ingredients used for this recipe.
The first part is for the Soft Serve Raspberry Ice "cream".

Raspberry Banana Ice cream Ingredients:
- 1 cup (around 100 grams) frozen unsweetened raspberries
- 2 organic ripe frozen bananas
- 1 tbsp organic raw unpasteurized honey
- 2 tbsp organic smooth almond butter

Begin by chopping the frozen bananas into medium sized chunks, and put them in the food processor.

Add half of the cup of frozen raspberries on top of the banans in the food processor.

Add 2 tablespoons of smooth organic almond butter to the bananas and raspberries in the food processor.

Finally, add 1 tablespoon of organic raw honey to the food processor. Pulse the ingredients several times until it becomes pink and creamy. You may need to stop and open the lid half way to push the unchopped ingredients down and re pulse again.

When the food processor mixture looks pink and creamy, it is ready to transfer to a bowl.

Transfer the Raspberry Banana soft serve ice cream into a bowl. Sprinkle the reserved half cup of frozen raspberries on top of the icecream.
You can enjoy it like it is, or, make it even more amazing by stirring up some almond milk chocolate sauce. I put this bowl into the freezer to stay cool while I prepared the chocolate sauce.

Almond Milk Chocolate Sundae sauce ingredients:
- 1/4 cup (30 ml) unsweetened vanilla almond milk
- 1 tsp organic virgin coconut oil
- 2 tbsp organic unsweetened cocoa powder
- 1 tsp organic vanilla extract
- 1 tbsp raw organic unpasteurized honey

Place all the chocolate sauce ingredients into a small cup or bowl. Stir well and microwave on high for 20 seconds. Stir well again.

Pour the melted Almond Milk Chocolate Sundae Sauce over the frozen raspberries and banana soft serve ice cream. Your frozen chocolate treat is ready to indulge in, guilt free!

A whole recipe of the ice cream is 493 calories. Divide it into 4 servings makes it an affordable and nutritious 123 calories. Adding the chocolate sauce on top, makes each 1/4 serving, 182 calories.
