Healthy Red Velvet Chocolate Beet Brownies- no sugar,dairy free,wheat free

Red velvet chocolate cake in a brownie version that is also good for you? Yes, it's true.


The deep red glow comes from moist healthy and sweet beets stirred in with organic cocoa for the chocolatey-ness.


Because of their sweetness, beets almost seem like a fruit. Yet, they come packed with so much nutrition that you can enjoy the mild sweet flavours with no guilt. With high levels of antioxidants and antiflammatory agents beets are promoted to possibly reduce cancer risks. Beets are a good source of folate and betaine to help reduce risk of heart disease and artery inflammation. A good source of lutein makes them good for eye health. Beets provide energy boosts, so great to eat or drink before a work out. The nitric acid increases blood flow and can enhance brain health and reduce dementia risk. Of course the good old vegetable fibre in beets is great for your digestion.


Natural organic cocoa is not only tasty but cocoa powder in the brownies and glaze is rich in polyphenols good for blood flow, for brain function and also heart healthy.



Other good-for-you ingredients include protein rich egg whites, gluten free oat flour, and coconut oil reported to be a healthy oil for your body.


Here is the full list of ingredients to gather for the Red Velvet Chocolate Beet Brownies:

- about 3 medium beets (250g) cooked and mashed

- 6 tbsp organic coconut oil

- 1/2 cup stevia or monk fruit sweetener

- 3/4 cup organic cocoa powder

- 1/2 tsp baking powder

- 1/4 cup free range egg whites (2 egg whites or 63 g)

- dash of pink Himalayan sea salt



Begin by scrubbing and chopping the beets.


Place the beets and a little bit of water in a pot, and cook them until softened. When soft, remove from heat to cool.



While the beets are cooking and cooling, line a square cake pan with parchment paper.


Once the beets have cooled, mash them until they are smooth and creamy.


In a sauce pan, melt the 6 tbsp of coconut oil and add the 1/2 cup of sweetener. remove from heat, and stir in the 3/4 cup of organic cocoa powder. Stir well. Add the dash of pink Himalayan sea salt.



In another medium bowl, whip the 2 egg whites until stiffened.


Gently fold the whipped egg whites into the brownie batter, and stir,


Add the 2 cups of mashed beets to the chocolate mixture and gently stir together.


Add the 3/4 cup oat flour, 1 tsp cinnamon and 1/2 tsp baking powder. Stir well until well combined.


Once the brownie batter is stirred well, transfer it to the parchment paper lined baking pan. Preheat the oven to 350 F.


Smooth the batter to the edges of the cake pan. Then place the pan into the preheated oven and bake for 25 - 35 minutes or until it is no longer moist on the top.


When the brownies are done, let the cake pan cool on a wire rack.

In the mean time, while the brownie pan is cooling, prepare the chocolate glaze topping.


Gather the ingredients for the chocolate glaze:

- 1/2 cup organic coconut oil

- 2 tbsp raw organic unpasteurized honey

- 1/2 tsp pure organic vanilla extract

- dash of pink Himalayan sea salt


Combine all the ingredients into a heat proof bowl and stir. Microwave on high for 20 seconds until it melts.



Stir the chocolate glaze again after it comes out of the microwave and allow to cool for a few minutes. Pour it over the cooled chocolate brownies and evenly spread over the top.


Place the brownie pan in the fridge to cool until the chocolate glaze hardens.


When the brownie glaze is solid, you can remove the pan from the fridge. Lift the brownie slab from the pan by lifting the edges of the parchment paper. I scored the top of the brownie slab into 16 even sections as a guide to cut 16 pieces which work out to around 148 calories each.


Only 148 calories for a rich Red Velvet Chocolate Beet Brownie coated in healthy chocolate glaze made with healthy organic ingredients. So, eat and be healthy!



Serve these and watch them disappear. Just say its a red velvet chocolate brownie. No body will guess it has beets to give it that rich moist taste and red glow.
