Autumn comes with its own unique smells and flavours of cinnamon, molasses, pure organic honey, apples and warm breads. Can we combine these into a healthy recipe?
I created this Fall Honey Cinnamon Molasses Apple Bread infused with rich spicy warm flavours delicious enough to call it a comfort food. With only wholesome ingredients, you won't need to feel guilty while enjoying it. Made in the slow cooker, allows all the flavours to infuse richly and deliciously!
Apples are wholesome and are an easy and tasty way to get antioxidants, flavanoids, fibre and phytonutrients. The lovely warm flavour of cinnamon comes with health benefits as it can lower blood sugar and reduce heart disease factors.
Organic unsulphured molasses contains vital vitamins and minerals such as iron, calcium, magneseum, vitamin B6 and seleneum.
Organic whole wheat flour has bran fibre, B vitamins and minerals. Being organic, this flour should be free of pesticides associated with wheat farming.
Raw unpasteurized honey has antioxidants and antibacterial and antifungal properties. Add some protein with the egg white meringue topping, sweetened with stevia and sprinkled with more cinnamon!
Lets gather the ingredients and get started:
Honey Cinnamon Molasses Apple Bread ingredients:
- 1 tbsp yeast
- 1 cup warm water
- 2 tbsp raw organic unpasteurized honey
- 3 medium organic apples
- 2 cups organic whole wheat flour
- 1/3 cup organic unsulphured molasses
- 1 tsp organic cinnamon
- 1 dash of Himalayan pink sea salt
- 2 tbsp extra virgin olive oil
Mix 1 tbsp honey to a small bowl with 1 cup warm water and mix well. Then add the 1 tbsp yeast and lightly stir. Let the bowl rest until the yeast gets foamy.
Chop the 3 medium apples (I used organic gala) and place them in a medium sized bowl.
Stir the 1/3 cup organic molasses and 1 tsp cinnamon into the apples and set aside,.
In another medium sized bowl, add the 2 cups of whole wheat flour and 1 tbsp of organic honey. Add a dash of pink Himalayan sea salt. Stir until combined.
Add the bowl of foamy water and yeast mixture to the flour mix and keep stirring until it forms a dough ball.
Add 2 tbsp of extra virgin olive oil to the dough ball, and keep mixing until it is combined. It will be a soft dough.
Place the dough on a floured board, and knead it for about 5 minutes. Lightly sprinkle flour as needed to keep it from sticking to your hands.
If you have a stand mixer, then place the dough in the bowl with the dough kneading attachment for 5 minutes. Scrape the sides and lightly sprinkle flour as necessary to keep it from sticking.
Once the dough has been kneaded, flatten it into a small pizza shape.
Once the dough is flattened, pour on the molasses cinnamon apple mixture.
Wrap the ends of the dough around the apples. Pinch it together at the top of the apples to keep it from falling open.
Line a slow cooker with parchment paper. Turn the setting on high.
Carefully lift the apple dough ball into the slow cooker.
Make a tent with a couple of paper towels to prevent water moisture dropping onto the dough then place on the slow cooker lid. Leave it for 1.5 hours or until the bottom is browned.
Carefully lift the apple bread from the slow cooker by the edge of the parchment paper and put it on a baking sheet. Place the bread under the broiler in the oven for a few minutes until it gets browned on top.
I flipped my bread over (like an upside down cake) as the thicker dough was at the part where it was pinched together. Allow to cool on a wire rack. You can enjoy it as is, or add the cinnamon meringue topping.
Meringue Topping Ingredients:
- 1/4 cup (63 grams) free run egg whites or the egg whites from 2 eggs
- 1 tbsp stevia sweetener
- 1 tsp organic vanilla extract
- 2 tbsp water
- organic cinnamon to sprinkle on top
Place all the egg whites, vanilla extract, stevia and water into a heat proof bowl. Place it over simmering water as a double boiler.
Whip the egg white mixture with a hand held mixer on high/whipping setting for several minutes over the boiling water until it gets thick and foamy and stiff.
Take it off the heat and whip for another minute. It is now ready to quickly place on top of the apple bread.
Sprinkle organic cinnamon over the meringue, Place the apple bread with meringue into the oven under the broiler just until it gets browned on top.
The final result is a delicious savory spicy apple bread oozing with cinnamon molasses apples inside with a lightly toasted cinnamon meringue topping.
It was hard to resist a second helping when this treat was still warm from the oven. A 1/8th serving of this healthy apple bread comes in at 218 calories. I would say its worth every bite!
