Writer: Cookery and CrochetCookery and Crochet

Here is a unique version of protein balls that doesn't include, chocolate or peanuts or dairy (no whey). A refreshing version with the juice and rind of a real (organic) lemon, some healthy organic coconut and a touch of coconut oil mixed with ground real almonds.

Delicious fresh lemons with creamy coconut and bits of almonds.

All the mixed ingredients have health benefits along with vega protein to increase your body muscle building. What a great way to have a treat guilt-free!

At 43 calories a piece, you can pop in 2 or 3 for your energy boost.

The Ingredients list are dairy free (No whey powder) and peanut free.

Ingredients I used for the Lemon Almond Coconut Protein Balls

Lemon Almond Coconut Protein Balls Ingredients:

- 1 scoop (41 grams) of vanilla Vega Sport Protein powder

- 1 cup organic (no sulphites) shredded unsweetened coconut

- 1/2 cup organic coconut flour

- 1 organic fresh lemon juice and rind (zest)

- 1/4 cup almond coconut blend milk (Silk)

- 1/4 cup organic coconut oil

- 2 tbsp raw organic honey

- around 1/4 cup ground almonds

Add first 3 ingredients and mix.

Put the scoop of protein powder, the shredded coconut and coconut flour in a bowl and mix it together.

Then add the rest of the ingredients, except the ground almonds.

With the other wet ingredients, squeeze the juice and grate the rind of a lemon creating lemon zest.

Stir until the mixture forms a dough. Add a bit more almond/coconut milk if it seems a bit dry to help it stick together.

Scooping a half tbsp of mixture to form a protein ball.

When the mixture is nice a doughy, you can begin to scoop about a half tablespoon of mixture, and then roll it between your hands to form the protein balls. Before placing it on a piece of parchment paper, dip the dough ball into some ground almonds or almond meal to form a nice almond coating.

My recipe turned out 28 protein balls, which I calculated to be around 43 calories each.

Store them in the fridge or freezer, in a covered container until you are ready to indulge in some lemony coconut almond protein treats.

Protein bars from the store can often still be just another candy bar when you read the ingredients. Even if you don't work out, these Lemon Almond Coconut protein balls are a better choice with your afternoon tea than a store bought cookie.
