Breads and grains tend to be knocked off our list of allowable foods when we are trying to reduce our carbohydrate intake. But I have learned it is the quality of the carbohydrates that is important. Traditional low food value foods high in processed carbohydrates is not recommended. But whole organic foods such as vegetables and some fruits and whole sprouted grains are a good balance to a healthy diet plan.
Sprouted grains have enzymes that have broken down proteins and carbohydrates. This process makes it low glycemic and is easier to digest than standard high carbohydrate breads. Sprouted grains have more nutrients which include folate, iron, vitamin C, zinc, magnesium and protein. Being organic, the sprouted grain flour will be free from pesticides and insecticide toxins usually found in store-bought wheat and grain products. In addition to grains, a unique blend of protein flour was used to increase the plant based protein.
The Bulk Barn sprouted protein flour is made from organic sprouted wheat, organic sprouted spelt, millet, barley, navy beans and organic sprouted lentils. No additives or preservatives makes this a pure wholesome grain bread. Instead of sugar for the yeast activation, some raw unpasteurized honey is blended into the mix. To lighten the bread texture, some free-range egg white was added and will also add to the protein benefits of this health bread. If you prefer, you can skip the egg whites.
List of Ingredients:
- 1 1/2 cups hot water
- 3 tablespoons organic extra virgin olive oil
- 3 tablespoons organic raw unpasteurized honey
- 1 tsp salt
- 1/2 cup free run egg whites
- 2 cups sprouted organic protein flour
- 2 cups sprouted organic whole wheat flour
- 2 tbsp quick rise yeast
Put all the liquid ingredients into the bread maker - hot water, olive oil, honey and egg whites.
Next, carefully layer the 2 sets of 2 cups of flours on top of the liquids.
Create a well in the flour to place the 2 tablespoons of fast rising yeast, without disturbing the liquids.
Once the yeast is layed on the four, close the lid to the bread machine and set it to EXPRESSBAKE. While the dough is kneeding, open the lid briefly and add another 1/2 tablespoon of olive to keep the dough from sticking to the sides. Close the lid again.
The bread will be done in 58 minutes.

Place the hot bread on a cooling rack. And serve when it is not too hot to handle.
Fresh bread is good for a day or two, since there are no preservatives, it is best the same day after it is baked.
This bread is great with fresh toppings and toasted.
