Organic Kaiser or Hamburger Buns - easy in the bread machine

I used the breadmaker to mix and knead the dough before shaping and baking them as buns. But you could do it by hand if you don't have a bread maker.
In the Bread Maker add:
- 1 1/4 cups very warm water
- 3 tbsp olive oil

On top of the liquids, add:
- 4 cups of organic sprouted fours
- 1/2 tsp salt

Make a shallow well in the flour and add:
- 3 tsp of bread machine yeast.

Without getting the yeast wet, place it in a shallow well in the flour, in the bread machine.
Close the lid and set the machine to the "dough" setting.
As the dough is being kneaded, add another 1/4 cup warm water to make sure it is moist, sticks together and not too dry. Whole grain and sprouted flours are dense and tend to need a bit more water and/or oil than conventional processed white wheat flours.
It will form a soft dough ball. Then close the lid and lit it rise on the dough setting for about 1.5 hours.
When it is finished rising, it will be soft and pouffy.

Have a floured bread board ready to roll the bread dough into a log shape.


If you want a smaller burger bun, then cut them in half again the make 18 sliders - or mini buns.
I then rolled the dough in my clean hands.

You can put the rolled dough balls onto a pan lined with parchment paper an inch or 2 apart. In this example, I put them in individual baking bowls, thinking it would help them keep their shape, in case they pooffed out too far.

Preheat the oven to 350 F while you let the buns rest for 15 to 20 minutes.
Brush the tops of the buns with extra virgin olive oil.

Bake in the 350 F oven for 25 - 30 minutes or until a light golden brown.
After they have cooled on the pans for a few minutes and are easier to handle, transfer to wire racks to keep cooling.

I made 8 larger buns - kaisers or deluxe hamburger buns. You could cut them in half and eat an open faced burger or sandwich with them to cut the bread calories in half. I calculated for this recipe the 8 buns work out to about 230 calories each. A half bun or if you baked 16 small buns, they would be around 115 calories each. When made with sprouted organic grain flour, then this is unprocessed wheat-free nutrition and not too bad to enjoy a healthy version of burgers and buns!
