A sophisticated dark chocolate taste in a soft cookie surrounded by a toasted ground almond coating. Rich and moist from the healthy avocado and coconut oil. Not sticky kids stuff! Perfect with a cup of tea when you would like something chocolatey but not too sweet
Guilt free cocoa treat with healthy ingredients - no sugar, no bad fats, no dairy or eggs.
Ingredients:
- 1 1/4 cups sprouted organic flour
- 1 tsp baking powder
- 1/2 tsp sea salt
- 2/3 cup organic cocoa powder
- 1/4 cup coconut oil
- 1/4 cup mashed avocado
- 1/2 cup organic molasses
- 1 tsp pure organic vanilla
- 1/3 cup almond milk
- 1/2 cup ground almonds
In a medium bowl place all the dry ingredients, Whisk until they are well blended.
Set aside the bowl of dry ingredients.
In a stand bowl mixer, beat the coconut oil, avocado, monk fruit sweetener and molasses.
Add 1 tsp of pure organic vanilla when the avocado, coconut oil, monk fruit sweetener and molasses are well blended.
Once the vanilla is blended, begin adding the flour mixture and almond milk alternatively in 3 additions. While constantly mixing.
Once the dough is well blended, remove the bowl from the mixer.
Use a tablespoon to scoop the cookie dough. Roll it in your clean hands and then dip in the ground almond meal.
Place the almond coated cookie dough on the parchment lined cookie pan. Lightly press the dough to flatten it slightly.
Once the dough is all placed onto the pan, bake in a preheated oven at 350F for 8 - 10 minutes.
When the cookies are cooled, store in a covered container.
