Wild Mint Chocolate Chunk Healthy Ice "Cream" - no dairy, no sugar

Memories of chocolate chip mint ice cream... all in the past life before we started to eat clean and watch our weight, right? Well stop right here!

I created this amazing semi sweet treat with only wholesome ingredients that you would be doing a disservice to your body not to eat it!

I transformed some springs of wild mint growing amongst the herbs and wildflowers in my gardens into an amazing minty green icy creamy superfood dessert.
How can a dessert be good for you? Who would argue with the health benefits of an organic banana with its potassium and magnesium good for blood pressure and heart health; almond butter with its antioxidant Vitamin E and more potassium; raw honey with antioxidant properties, for healing and help for digestive issues; matcha green tea has antioxidants, amino acids and other nutrients to enhance your brain function and improve your immune system; cardamom is wonderful for the digestive system and liver detox; mint leaves contain small amounts of potassium, magnesium, calcium, phosphorus, Vitamin C, iron and Vitamin A; coconut oil is considered a healthy fat raising the good HDL cholesterol in your body; cocoa is a source or antioxidants, lower blood pressure and protects your skin. a dash of sea salt has trace amounts of minerals and slightly lower amounts of sodium than regular salt.
Mix that great list of healthy beneficial ingredients in my Wild Mint Chocolate Chunk Ice "Cream" and indulge guilt free with a superfood dessert!

Start the recipe by combining the ingredients for the healthy chocolate chunks:
Chocolate chunk recipe ingredients:
- 1/4 cup organic virgin coconut oil
- 1 tbsp raw organic unpasteurized honey
- 2 tbsp organic unsweetened cocoa powder
- 1 pinch of pink Himalayan sea salt
- 1 tsp organic vanilla extract
Mix all of the ingredients into a heat-proof bowl and stir well. Put it in the microwave for 15-20 seconds on high until it just melts.

Once it comes out of the microwave it will be warm and melted, and stir it again.

Line a small square dish with parchment paper. Transfer the melted chocolate onto the parchment paper using a spatula.

Place the warm chocolate dish into the fridge or freezer until it gets hard.
While the chocolate is cooling in the fridge, we can make the green wild mint ice 'cream'.
Gather the ingredients:
- 2 ripe organic frozen bananas
- 1 tbsp organic smooth almond butter
- 1 tbsp raw organic unpasteurized natural honey
- 1 tbsp matcha green tea powder
- 1 tsp cardamom powder
- 1 sprig of (wild) mint leaves

Begin by chopping the frozen bananas into medium chunks.

Place the chopped frozen bananas into the food processor. Place the almond butter, the honey, the matcha green tea and the cardamom on top of the bananas in the food processor.

Pull the leaves off of the sprig of mint. Reserve a couple of leaves for garnish.

Chop the leaves into smaller pieces, then add them to the food processor.

Pulse the ice cream ingredients in the food processor a couple of times, stopping half way to push down the sides with a spatula. The ice cream is ready when it is a light green and creamy.

Once the mint ice cream is ready, bring the cooled hardened chocolate out of the fridge. Remove it from the plate and peel off the parchment paper.
Place the chocolate slab onto a cutting board and chop it into chunks.

Reserve 2 chunks for garnish. Place the remaining chocolate chunks into the food processor. Pulse the wild Mint Chocolate Chunk Ice "Cream" for a couple of spins. Don't over process it so to keep the chocolate pieces chunky.
Place the ice cream mixture into two serving dishes.

Garnish the top of the soft serve ice cream with the 2 reserved chocolate chunks, and a mint leaf. Serve immediately, or put in the freezer for a while to harden the ice cream until you are ready to serve it.

One serving of this recipe works out to a generous 504 calories. Comparable to a rich ice cream dessert at the ice cream parlor, but the health benefits of this healthy superfood dessert won't injure your body and will be used to feed your system. So enjoy!
